  • Total Time: 30 minutes
  • Yield: 20 skewers (10-20 servings)

Ingredients

– 16 ounces cheese tortellini

– 40 large olives

– 40 cherry tomatoes

– 40 thin slices salami

– 40 thin slices prosciutto

– 20 baby mozzarella balls

– 20 cubes sharp provolone cheese

– 40 torn basil leaves

– 20 pieces chopped artichoke hearts

– 2 roasted red peppers (seeds removed, chopped)

– 1/2 cup olive oil

– 3 tablespoons freshly squeezed lemon juice

– 1/2 cup loosely packed fresh basil

– 2 tablespoons red wine vinegar

– 1 tablespoon honey

– 2 cloves fresh garlic (minced)

– 3/4 teaspoon salt

– 1/2 teaspoon black pepper

Instructions

1-First Step: Cook the Cheese TortelliniBegin with the 16 ounces of cheese tortellini; follow the package instructions to boil them until they’re just tender. Once done, drain and rinse under cold water to stop the cooking process and keep them firm. Toss the tortellini with about 1/3 cup of the homemade dressing to let the flavors soak in right away.

2-Second Step: Prepare the DressingNext, blend the dressing ingredients: 1/2 cup olive oil, 3 tablespoons freshly squeezed lemon juice, 1/2 cup loosely packed fresh basil, 2 tablespoons red wine vinegar, 1 tablespoon honey, 2 cloves minced garlic, 3/4 teaspoon salt, and 1/2 teaspoon black pepper until smooth. Taste and adjust seasonings as needed for the perfect balance. This step takes just a few minutes and can be done in advance for convenience.

3-Third Step: Marinate Key IngredientsAfter making the dressing, refrigerate the cooked tortellini and 20 baby mozzarella balls tossed in some of it for 15 minutes to 4 hours. This marinating time helps the flavors meld, but if you’re short on time, even 15 minutes works great. Meanwhile, prep your other items like chopping the 2 roasted red peppers and tearing the 40 basil leaves.

4-Fourth Step: Thread the SkewersNow, take your 20 long wooden skewers and start threading. Alternate ingredients for visual appeal and taste: begin with a cherry tomato, add a slice of salami or prosciutto, then a mozzarella ball, a piece of tortellini, an olive, some chopped artichoke heart, roasted red pepper, and a basil leaf. Aim for 5-7 pieces per skewer to keep them bite-sized and balanced. This assembly should take about 10-15 minutes once everything is ready.

5-Fifth Step: Arrange and ServeOnce all skewers are assembled, arrange them on a serving platter. Drizzle with the remaining dressing if you like, and serve right away for the freshest taste. For dietary tweaks, such as using gluten-free tortellini, adjust in this step to ensure everyone can enjoy. The total time, including prep and cooking, is around 30 minutes, making it ideal for parties or quick snacks.
