Ingredients

– 1/4 cup salted butter, melted

– 1/2 cup vanilla flavored Greek yogurt

– 2 whole eggs

– 1/2 cup brown sugar

– 1 teaspoon vanilla extract

– 1 cup cinnamon oat pancake mix

– 1 cup chopped apples (about 2 small apples, peeled)

– 2 tablespoons maple syrup

– 2 cups powdered sugar

– 1/4 cup whole milk

– 1/2 teaspoon ground cinnamon

Instructions

1-Preheat your oven to 350°F (175°C). Grease a standard 9×5-inch loaf pan with butter or non-stick spray.

2-In a large bowl, whisk together the melted butter, Greek yogurt, eggs, brown sugar, vanilla extract, cinnamon oat pancake mix, and maple syrup until smooth and well combined.

3-Gently fold in the chopped apples using a spatula. Be careful not to overmix this keeps the bread tender and prevents it from becoming dense.

4-Pour the batter into the prepared loaf pan and smooth the top with a spoon or offset spatula.

5-Bake for 40 to 45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean (a few moist crumbs are fine; wet batter is not).

6-Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before glazing.

7-Prepare the glaze by whisking together powdered sugar, milk, and cinnamon until smooth. Drizzle or spread over the cooled loaf.

8-Slice and serve! For a softer texture, microwave a slice for 30 seconds before enjoying.
