Ingredients

– 1/2 pound Ground sausage Can sub with bacon or vegan meat alternative

– 1/2 diced Sweet onion Diced for easy cooking

– 6 Eggs Fresh for scrambling

– 1/2 cup Yogurt Greek or any type, including cottage cheese

– To taste Sea salt and black pepper For seasoning

– 1 cup Shredded cheese Cheddar or Mexican blend

– 6 Flour or corn tortillas At room temperature or warmed

– Oil For cooking and drizzling Use your favorite like olive or avocado

Instructions

1-Warm oil in a large skillet over medium heat. Cook the diced sweet onion until browned.

2-Add 1/2 pound ground sausage, crumbling as it cooks for 5-7 minutes. Strain excess fat and remove from heat.

3-Whisk 6 eggs with 1/2 cup yogurt, sea salt, and black pepper until combined.

4-Soft scramble the eggs in the skillet to your liking.

5-Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper and grease it lightly.

6-Spread 6 tortillas on the sheet. Layer each with cheese on half, then sausage-onion mix and scrambled eggs, top with more cheese. Fold to seal.

7-Drizzle or spray oil on top. For crispier tacos, place another baking sheet on top while baking. Bake 10-12 minutes until crispy.

8-Serve warm with guacamole, salsa, or sour cream.
