3 to 4 medium or large ripe bananas

2 tablespoons brown sugar

1 1/2 teaspoons vanilla extract

3/4 teaspoon ground cinnamon

1/2 cup softened butter

1 cup sugar

2 eggs

2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

2 tablespoons sour cream or Greek yogurt

1 teaspoon cinnamon

1 cup flour

1 cup brown sugar

6 tablespoons cold butter

Instructions

1-Preheat your oven to 350 degrees Fahrenheit. Grease two 8ร—4 inch pans.

2-In a small bowl, mash bananas with brown sugar, vanilla extract, and ground cinnamon.

3-In a large bowl, cream butter and sugar until light and fluffy.

4-Add eggs and beat until combined.

5-Sift flour, baking soda, and salt into wet ingredients and stir until just combined.

6-Add sour cream and mix.

7-Pour in mashed bananas and stir to combine.

8-For the crumb topping, mix cinnamon, flour, and brown sugar. Cut in cold butter until mixture resembles coarse crumbs.

9-Sprinkle crumb topping evenly over batter in pans.

10-Bake for 35 to 40 minutes or until a cake tester comes out clean with a few moist crumbs.

11-Cool for 10 minutes in pans, then transfer to a wire rack to cool completely.

12-Slice and serve.
