Instructions
1-Prepare the salsa: Prepare the salsa by combining 2 cups diced fresh pineapple, 4 strips cooked bacon diced, 1/2 cup chopped cilantro, 1/4 cup finely chopped red onion, 3 tablespoons finely chopped jalapeno pepper (stemmed and seeded), 1 clove garlic minced, and the juice of 1 large lime in a medium bowl. Mix well and season with salt and pepper as desired.
2-Preheat the grill: Preheat a grill to medium-high heat and brush with olive oil to prevent sticking.
3-Grill the chicken: Remove the chicken from the marinade, discard the marinade and bag, then grill the chicken for about 5 minutes per side until cooked through.
4-Serve: Finally, serve the warm chicken topped with the fresh pineapple bacon salsa for a tasty finish.
