Ingredients

– 2 tablespoons avocado oil

– 1 medium yellow onion, diced

– 1 green bell pepper, diced

– 1 poblano pepper, diced

– 1 to 2 jalapeño peppers, diced (adjust for spice preference)

– 3 garlic cloves, minced

– 1 teaspoon kosher salt, divided

– 1 pound (450 grams) ground beef

– 1/2 teaspoon freshly ground black pepper, divided

– 3 tablespoons tomato paste

– 1 tablespoon hot sauce (optional for heat)

– 1 tablespoon chili powder

– 1 teaspoon smoked paprika

– 1 teaspoon ground cumin

– 1/2 teaspoon garlic powder

– 1 (14.5 oz / 411 g) can fire-roasted diced tomatoes

– 1 cup (240 ml) low-sodium beef broth

– 1 (15 oz / 425 g) can red kidney beans, drained and rinsed

– 1 teaspoon coconut sugar (optional)

– Sour cream, for garnish

– Shredded cheddar cheese, for garnish

– Corn chips, for garnish

– Chopped green onions, for garnish

Instructions

1-Getting started with this beef and bean chilli is straightforward, and it begins with prepping your ingredients for smooth cooking. First, heat the avocado oil in a large pot over medium heat and add the diced onions, green bell pepper, poblano pepper, jalapeño peppers, garlic, and half of the salt (1/2 teaspoon). Cook these until the vegetables are tender, which takes about 8 minutes, building a flavorful base.

2-Next, add the ground beef along with the remaining salt (1/2 teaspoon) and a quarter of the black pepper (1/4 teaspoon). Brown the meat for around 7 minutes, then drain the excess fat, leaving about 2 tablespoons in the pot for extra richness. This step ensures the beef stays juicy and full of taste.

3-Stir in the tomato paste, hot sauce if you’re using it, chili powder, smoked paprika, cumin, and garlic powder. Let these cook for 2 minutes to release their aromas and deepen the flavor. Then, pour in the fire-roasted diced tomatoes and beef broth, stir everything together, and bring it to a rapid simmer.

4-Simmering and Finishing Touches Reduce the heat to medium-low, cover the pot, and let it simmer for at least 30 minutes, stirring occasionally for the best results. For even more depth, you can simmer it on low for up to 3 hours. About 15 minutes before serving, add the drained kidney beans and coconut sugar if you want to balance the acidity. Continue cooking uncovered until the beans are tender, which should take around 15 minutes. Finally, serve it hot with garnishes like sour cream, shredded cheddar cheese, corn chips, and chopped green onions. This method not only makes the dish hearty but also allows flavors to meld perfectly, as shared in variations like those in rich chocolate desserts that pair well with savory meals.

Notes

🌶️ To reduce spiciness, omit jalapeño peppers and hot sauce while retaining chili flavor – perfect for family-friendly meals
🍯 Coconut sugar helps balance acidity and heat but is optional if you prefer a more traditional chili taste
🥫 This chili freezes well – cool completely before freezing in airtight containers, thaw overnight, and reheat on stove or microwave for quick meals
