Ingredients
1.5 tablespoons olive oil, divided
500g (1 lb) stewing beef, cut into small cubes
1/2 teaspoon salt and pepper
1 chopped onion
3 minced garlic cloves (about 1 tablespoon)
2 celery stalks, sliced
3 carrots, sliced (halved if large)
4 tablespoons flour
2 1/2 cups (625 ml) low sodium beef broth or stock
1 1/2 cups (375 ml) dry red wine, stout, or dark beer (optional alcohol)
1 1/2 cups (375 ml) water
2 tablespoons tomato paste
2 bay leaves
1 teaspoon dried thyme
1 cup frozen peas
2 potatoes, cut into cubes
1 tablespoon butter or oil (for optional buttery mushrooms)
200g (6 oz) small mushrooms, quartered or halved (optional)
Instructions
1-Heat 1 tablespoon olive oil in a large heavy pot over high heat.
2-Pat beef dry, season with salt and pepper, then brown aggressively in batches, adding oil as needed. Remove beef once browned.
3-Add more oil to the pot if dry, then cook garlic and onion for 2 minutes.
4-Add carrots and celery, cooking another 2 minutes until onion is translucent.
5-Stir in flour.
6-Slowly pour in beef broth, stirring constantly.
7-Add wine or stout, water, tomato paste, bay leaves, and thyme, stirring to combine.
8-Return the browned beef to the pot.
9-Cover and simmer gently over medium-low heat for about 1 hour and 15 minutes, until beef is tender.
10-Add potatoes and peas, simmer uncovered for another 20 minutes.
11-If using mushrooms, sautรฉ them separately in butter until golden and add during the last 5 minutes of cooking.
12-Adjust seasoning with salt and pepper to taste.
13-Serve hot, optionally garnished with parsley and accompanied by crusty bread or soup dunkers.
