πŸ‡ Enjoy the fresh and vibrant flavors of blackberries swirled throughout a moist and creamy pound cake.
🍰 This recipe combines a rich texture with a tangy blackberry icing, making it a perfect treat for any occasion.

  • Total Time: 1 hour 30 minutes
  • Yield: 10-12 servings

Ingredients

– 4 ounces (about 1 cup) fresh blackberries

– 3 tablespoons (38g) granulated sugar

– 1 tablespoon (15mL) lemon juice

– 2 cups minus 2 tablespoons (225g) cake flour

– Β½ teaspoon salt

– 1 cup (227g) unsalted butter, softened

– 1 and Β½ cups (300g) granulated sugar

– 1 teaspoon vanilla extract

– 4 large eggs at room temperature

– ΒΌ cup (60g) sour cream at room temperature

– 2 ounces (about Β½ cup) fresh blackberries

– 1 cup (120g) powdered sugar

– 1 tablespoon (15mL) milk

– Β½ teaspoon vanilla extract

– β…› teaspoon salt

Instructions

1-Begin by preheating your oven to 350Β°F (175Β°C). Prepare a 9Γ—5 inch loaf pan by greasing and flouring it to avoid sticking.

2-In a large bowl, cream the unsalted butter and granulated sugar until it’s light and fluffy, which helps give that creamy texture we love.

3-Add the eggs one at a time, beating well after each to mix in air and keep the batter smooth.

4-Sift the cake flour, salt, and any other dry items in a separate bowl to ensure even distribution.

5-Alternately add the dry mixture and sour cream to the creamed butter, starting and ending with the flour mix for the best consistency.

6-Gently fold in the fresh blackberries from the swirl ingredients, being careful not to mash them for that perfect berry pop.

7-Pour the batter into your prepared pan and smooth the top to help it bake evenly.

8-Bake for 60-70 minutes, or until a toothpick comes out clean from the center.

9-Let it cool in the pan for about 10 minutes, then move it to a wire rack to cool fully before adding the icing.

10-Once cooled, top with the blackberry icing made from the listed ingredients, and slice to serve. Adapt for your diet as needed from earlier tips.
