Ingredients

– 1 tablespoon olive oil

– 2 cups chopped vegetables (red onion, bell pepper, mushrooms, broccoli)

– 1 pound breakfast sausage or Italian sausage (casings removed)

– 8 eggs

– 2 pinches salt to taste

– 2 teaspoons unsalted butter

– 8 burrito-sized tortillas

– 2 cups shredded cheese (cheddar, Monterey jack, pepper jack, or a combination)

Instructions

1-Preheat your oven to 375Β°F if you plan to bake the burritos right away; if you’re freezing them, you can skip this step for now.

2-Heat the olive oil in a skillet over medium heat, then sautΓ© the chopped vegetables until they soften, which takes about 4 minutes, and transfer them to a bowl.

3-Cook the sausage in the same skillet, crumbling it as it browns and cooks fully, then add it to the bowl with the vegetables, making sure to leave any grease behind.

4-Whisk the eggs with the salt until they’re fully combined. Wipe out the skillet, melt the butter in it, pour in the eggs, and gently scramble them over medium-low heat to keep them from drying out.

5-Gently combine the scrambled eggs with the sausage and vegetables in the bowl.

6-Place about 1/8 of the filling on each tortilla, positioning it slightly off-center, sprinkle with 1/4 cup of shredded cheese, and wrap tightly to form the burritos.

7-Serve them immediately, bake for 5-10 minutes to crisp the tortillas and melt the cheese, or prepare them for freezing as needed.
