Instructions

1-Heat 2 tablespoons extra-virgin olive oil in a large pot over medium heat. Add the chopped yellow onion, ยฝ teaspoon salt, and several grinds of fresh black pepper. Sautรฉ until soft, about 5 to 8 minutes.

2-Toss in 3 pounds peeled, seeded, and cubed butternut squash. Cook for 8 to 10 minutes, stirring occasionally, until it starts to soften.

3-Stir in 3 cloves chopped garlic, 1 tablespoon chopped fresh sage, ยฝ tablespoon minced fresh rosemary, and 1 teaspoon grated fresh ginger. Cook 30 seconds to 1 minute until fragrant.

4-Pour in 3 cups vegetable broth, bring to a boil, then cover and simmer for 20 to 30 minutes until squash is tender.

5-Cool slightly, then blend in batches until smooth. Add up to 1 more cup broth if too thick.

6-Adjust seasoning to taste. The blending creates that dreamy texture without any extras.
