Ingredients
– 1 pound bite-size pasta such as fusilli, bowtie, rotini, or penne
– 2 tablespoons olive oil
– 1 pound shrimp peeled and deveined
– 1 pound chicken thighs cut into 1-inch pieces
– 1 small yellow onion chopped into ΒΌ-inch pieces (about ΒΎ cup)
– 3 minced garlic cloves
– 2 bell peppers assorted colors chopped into Β½-inch pieces (about 2 cups)
– 1 cup heavy cream
– 2 to 3 tablespoons Cajun seasoning adjusted to taste
Instructions
1-Pat the shrimp dry and cook them in 1 tablespoon of olive oil over medium-high heat for 2-3 minutes until pink, then set aside.
2-Using the remaining tablespoon of olive oil, cook the chicken with 1 tablespoon of Cajun seasoning for about 6 minutes until done.
3-Add the onion, garlic, and bell peppers to the skillet and cook for 5 minutes until softened, adding a small splash of water to deglaze and scraping brown bits from the pan. Transfer the vegetables and chicken to the bowl with the shrimp.
4-Pour the heavy cream into the skillet, whisk in the remaining Cajun seasoning, and simmer for 1-2 minutes to thicken the sauce.
5-Toss the cooked pasta in the sauce, adding reserved pasta water as needed to adjust consistency.
6-Return the shrimp, chicken, and vegetables to the skillet and mix evenly.
7-Serve hot, optionally garnished with fresh chopped parsley.
