Ingredients

– 1 pound dried pasta (preferably short shapes like rigatoni, fusilli, or penne)

– 3 tablespoons unsalted butter

– 3 tablespoons all-purpose flour

– 3 cups whole milk

– 3 to 4 cups mixed grated or shredded cheeses

– Salt and pepper to taste

– 1 pound mild Italian sausages, meat removed from casings

– 1 cup panko breadcrumbs for the crumb topping

– 2 teaspoons finely chopped parsley for the crumb topping

– Salt and pepper to taste for the crumb topping

– 2 teaspoons olive oil for the crumb topping

Instructions

1-Bring a large pot of lightly salted water to a boil.

2-Melt 3 tablespoons unsalted butter in a small saucepan over medium heat.

3-Whisk in 3 tablespoons all-purpose flour until smooth and cook for 1 to 2 minutes.

4-Slowly whisk in 3 cups whole milk, season with salt and pepper to taste, and cook over medium-low heat, whisking often, until the sauce thickens, about 10 minutes.

5-Stir in 3 to 4 cups mixed grated or shredded cheeses and cook over low heat until the cheese melts and the sauce is smooth.

6-Cook 1 pound mild Italian sausages (meat removed from casings) in a frying pan over medium heat until browned and cooked through, about 7 to 8 minutes, then drain and set aside.

7-Preheat the oven to 400 degrees F and lightly grease a 13 by 9 inch baking dish.

8-Cook the 1 pound dried pasta for half the recommended cooking time, drain, and return to the pot.

9-Pour the cheese sauce over the pasta and stir to combine.

10-Mix in the cooked sausage.

11-Transfer the pasta mixture to the prepared baking dish.

12-Combine the crumb topping ingredients (1 cup panko breadcrumbs, 2 teaspoons finely chopped parsley, salt and pepper to taste, and 2 teaspoons olive oil) with your fingers until blended, then sprinkle on top.

13-Bake for about 20 minutes or until bubbly and golden brown on top.
