– 1 cup red chermoula sauce (homemade or store-bought)
– 3 lemons for juice and slices
– 1/4 tsp saffron threads
– 2 small preserved lemons (pulp and rind separated, pulp chopped)
– 4 cloves garlic, minced
– 1/4 cup cilantro leaves, chopped
– 2 tbsp parsley, chopped
– 2 tbsp olive oil
– 1 tbsp lemon juice
– 1 1/2 tsp harissa
– 1 tsp kosher salt
– 1 tsp sweet paprika
– 1/2 tsp ground cumin
Instructions
1-Start by rubbing the chermoula sauce all over the 2 lbs of boneless, skinless chicken thighs to marinate them fully. Cover and let sit at room temperature for 30 minutes to enhance flavor and tenderness.
2-Slice the 3 lemons in halves and pan-roast them cut side down over medium-high heat until charred. Set them aside for serving to add a fresh citrus note.
3-Preheat the oven to 400ยฐF (204ยฐC). Grease a 9×13 inch (23×33 cm) baking dish with cooking spray or oil for easy cleanup.
4-Arrange the marinated chicken in a single layer in the baking dish and cover with foil to lock in moisture.
5-Bake for 30 minutes or until the internal temperature reaches 165ยฐF (74ยฐC), ensuring the chicken is fully cooked.
6-Remove the foil, pour the juice from one of the lemons over the chicken, and broil for 5 minutes to crisp and char the top for added texture.
7-Serve the chicken with the pan juices, charred lemon slices, steamed rice, and vegetables for a complete meal.
