1 teaspoon vanilla extract

1 tablespoon lemon zest

1 tablespoon lime zest

1/2 cup chopped pistachios

1/2 cup chopped cherries

Instructions

1-Preheat the oven to 325ยฐF (163ยฐC) and grease a 9-inch springform pan.

2-Mix graham cracker crumbs, sugar, and melted butter until moistened. Press evenly into the bottom of the pan and bake for 10 minutes. Cool on a wire rack.

3-Beat cream cheese and sugar until smooth and creamy. Add vanilla extract and mix well. Add eggs one at a time, beating after each. Incorporate lemon juice, lime juice, lemon zest, and lime zest thoroughly. Gently fold in chopped pistachios and cherries.

4-Pour the filling over the cooled crust and bake for 50 60 minutes until the edges are set and the center is slightly jiggly.

5-Turn off the oven, leave the cheesecake inside with the door slightly open for 1 hour. Remove and cool to room temperature on a wire rack. Cover and refrigerate for at least 4 hours, preferably overnight.

6-To serve, loosen the edges with a knife, remove the springform pan sides, and top with whipped cream, whole cherries, and chopped pistachios. Slice with a sharp knife, wiping between cuts.
