6 boneless skinless chicken thighs or 4 boneless skinless chicken breasts (pounded to even thickness)

2 tablespoons vegetable oil

3 teaspoons chili powder

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

ΒΌ teaspoon cayenne pepper

1 teaspoon salt

ΒΌ teaspoon pepper

Juice of 1 lime

1 cup uncooked white rice (preferably jasmine or long grain)

2 ΒΌ cups chicken broth

Chopped cilantro for garnish

Instructions

1-In a small bowl, combine 3 teaspoons chili powder, 1 teaspoon paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, ΒΌ teaspoon cayenne pepper, 1 teaspoon salt, and ΒΌ teaspoon pepper. Season the chicken with half of this mixture, saving the rest for later.

2-Heat 2 tablespoons vegetable oil in a large skillet over medium heat. Cook the chicken for 5-8 minutes per side until browned, then remove it from the pan.

3-Add 1 cup uncooked white rice, the reserved seasoning mixture, 2 ΒΌ cups chicken broth, and the juice of 1 lime to the skillet. Stir everything well to combine.

4-Return the chicken to the pan, placing it on top of the rice. Cover and cook for 20-25 minutes, or until the liquid is absorbed and the rice is tender.

5-Fluff the rice with a fork and garnish with chopped cilantro. Serve with fresh lime wedges for an extra zing!
