4 fresh poblano chiles, seeded and sliced in half
2 fresh jalapeño peppers, seeded and sliced in half
1.5 pounds fresh tomatillos, husks removed
1/2 cup fresh cilantro, coarsely chopped
Instructions
1-Prepare and season the pork: Begin by seasoning the pork with salt and pepper, then heat oil in a large pot over high heat to sear it until browned on all sides. This step locks in the flavors and sets the base for a hearty meal.
2-Sauté the onion and garlic: Once the pork is set aside, add the chopped onion to the pot and sauté until it’s tender, which takes a few minutes. Then, toss in the minced garlic and cook for just 30 seconds before stirring in the cumin and oregano.
3-Simmer the pork in broth: Return the pork to the pot, pour in the chicken broth, cover, and let it simmer on medium-low for 2 to 4 hours until the meat is tender and full of taste.
4-Broil and blend the peppers, tomatillos, and cilantro for the sauce: While that’s cooking, prepare the sauce by broiling the poblano chiles, jalapeños, and tomatillos cut side down on a baking sheet until they’re browned. Let them steam in a plastic bag for 5 minutes to make peeling easier, then blend them with cilantro until smooth.
5-Combine the sauce with the pork and finish cooking: Add this sauce back to the pot and cook everything together for another 30 to 45 minutes.
6-Serve with sides for a complete meal: Finally, serve it up with warm flour tortillas, rice, and beans for a satisfying finish.
