Instructions

1-Heat the 5 tablespoons vegetable oil in a saucepan over medium heat.

2-Add the 2 cloves garlic, minced, and β…“ cup finely chopped onion, then sautΓ© for about 3 minutes until the onion becomes translucent.

3-Whisk in the 3 tablespoons flour and cook for 2 minutes, stirring frequently.

4-In a separate bowl, whisk together the ΒΎ cup New Mexico red chile powder and 3 cups water, then gradually add this mixture to the saucepan while whisking to prevent lumps.

5-Bring to a steady simmer and cook over medium-low heat for 5 minutes, stirring often, until the sauce thickens.

6-Add the 1 teaspoon salt, Β½ teaspoon cumin, and Β½ teaspoon oregano, then simmer on low for an additional 3 minutes.

7-Once done, the sauce can be stored in jars and refrigerated to allow flavors to develop fully.
