๐Ÿฅฅ Start your day with Coconut Granola for a crunchy, flavorful, and nourishing breakfast option.
๐ŸŒฐ This recipe offers a wholesome blend of oats, coconut, and nuts, providing sustained energy and a delicious natural sweetness from maple syrup.

  • Total Time: 40 minutes

Ingredients

– 2 cups old-fashioned oats or gluten-free oats

– 3/4 cup shredded sweetened coconut

– 1/2 cup chopped almonds

– 1/3 cup pepitas

– 1 teaspoon cinnamon

– 1/4 teaspoon salt

– 4 tablespoons coconut oil, melted

– 1/2 cup pure maple syrup

– 1 teaspoon vanilla extract

– 1/4 teaspoon coconut extract

Instructions

1-First, preheat your oven to 300 degrees F and line a large baking sheet with parchment paper or a silicone mat for even baking and easy cleanup. In a large bowl, mix the oats, shredded coconut, chopped almonds, pepitas, cinnamon, and salt until everything is evenly distributed. In a separate small bowl, whisk together the melted coconut oil, pure maple syrup, vanilla extract, and coconut extract to create a smooth liquid mixture.

2-Next, pour the liquid over the dry ingredients and stir well until all pieces are nicely coated. Spread the mixture evenly on the prepared baking sheet, making sure it’s not too clumped for uniform toasting. Bake for 30 minutes or until golden brown, remembering to stir every 10 minutes to prevent burning and promote even cooking.

3-After baking, let the granola cool completely on the sheet before storing it, as this helps it crisp up. Store in an airtight container for up to one month, and enjoy it with yogurt or fresh fruit.

Notes

๐Ÿ For best flavor, use high-quality pure maple syrup.
๐Ÿฝ๏ธ To make chunkier granola, avoid stirring during baking, then let it cool and break into clumps.
๐ŸŒฐ Customize by swapping almonds with pecans or walnuts, or add dried fruits like raisins or cranberries.
๐Ÿฅฅ When melting coconut oil, do so gently to avoid it hardening when mixed with cooler liquids.
๐Ÿฏ Adjust sweetness by reducing maple syrup or using alternatives like coconut sugar or agave nectar.
