2 cups fresh or frozen corn

1 (14-ounce) can of petite diced tomatoes (undrained)

1 tablespoon of tomato paste

1 diced green bell pepper

1/2 medium diced sweet onion

1 tablespoon of vegetable oil

1 tablespoon of butter

1/2 teaspoon of Creole seasoning

1/4 teaspoon of dried thyme

1 teaspoon of hot pepper sauce

Salt and pepper to taste

Instructions

1-First, wash and slice the fresh okra and prepare the corn; dice the green bell pepper and sweet onion to get all ingredients ready.

2-Heat the vegetable oil and butter in a large skillet over medium heat, then sautΓ© the onion, bell pepper, and any other aromatics until they’re soft and fragrant, which takes about 5 minutes.

3-Next, add the diced tomatoes, tomato paste, Creole seasoning, dried thyme, and hot pepper sauce; let it simmer to blend the flavors for another 5 minutes.

4-Stir in the sliced okra and corn, cooking everything together for 10 more minutes until the okra is tender and the mixture thickens nicely remember, the sliminess of okra lessens the longer it cooks.

5-For dietary tweaks, substitute ingredients as needed, like using more veggies for a lighter version.

6-The total cook time is around 14 minutes, and serving it hot with rice or bread makes for a complete meal.
