– 1 tablespoon olive oil
– 1 red pepper, diced
– 1/2 yellow onion, diced
– 1 cup chicken broth (or vegetable broth or water for softening tortillas)
– 8 flour tortillas
– 8 ounces cooked crab meat, broken up
– 1/2 teaspoon seafood seasoning (adjust to taste)
– 1 cup whipping cream
– 1 cup green enchilada sauce
– 2 large handfuls shredded Monterey Jack cheese
– 1/4 cup chopped cilantro for garnish
Instructions
1-Preheat your oven to 350 degrees Fahrenheit.
2-Heat the olive oil in a pan over medium heat.
3-Add the diced red pepper and onion, and cook for about 5 minutes until just softened.
4-In a large bowl, combine the cooked onion and pepper, crab meat, seafood seasoning, and a portion of the shredded cheese, then mix well.
5-Pour the whipping cream into the bottom of a casserole dish.
6-Soak the tortillas briefly in the chicken broth for 30 seconds, then shake off excess liquid.
7-Place about one-eighth of the crab mixture onto each tortilla, roll them tightly, and arrange seam side down on top of the cream in the dish.
8-Sprinkle a large handful of cheese over the rolled tortillas.
9-Drizzle the green enchilada sauce on top.
10-Bake in the oven for about 30 minutes, until golden brown and bubbly.
11-Garnish with the chopped cilantro before serving.
