Ingredients

– 1 pound carrots, peeled and cut into uniform 2-inch pieces

– ยฝ cup grated parmesan cheese

– 2 tablespoons olive oil

– 1 teaspoon garlic powder

– ยฝ teaspoon salt

– ยฝ teaspoon coarse ground pepper

Instructions

1-Place the carrots in a medium saucepan, cover with water, and bring to a boil over medium-high heat. Simmer for about 10 minutes or until fork-tender, then drain and let cool slightly.

2-Preheat the oven to 425ยฐF (220ยฐC) and line a baking sheet with parchment paper for easy cleanup.

3-In a bowl, mix the carrots with ยฝ cup grated parmesan cheese, 2 tablespoons olive oil, 1 teaspoon garlic powder, ยฝ teaspoon salt, and ยฝ teaspoon coarse ground pepper. Spread the carrots evenly on the baking sheet without touching each other.

4-Smash each carrot piece with the flat bottom of a glass or jar to create a flat surface.

5-Roast for 20 minutes, then flip the carrots and roast for another 15 to 20 minutes until crispy and caramelized. Remove from the oven and optionally sprinkle with extra parmesan and flake salt.
