Instructions
1-First, boil the potatoes in water with 1 tablespoon salt until they’re soft that’s about 20-25 minutes for small ones or 30 minutes for medium. You can also try steaming or microwaving if that’s easier for you. Once done, drain and let them dry in a colander for 5 minutes to remove moisture.
2-Next, preheat your oven to 200ยฐC (390ยฐF) or 180ยฐC fan for even baking. Place the potatoes on a tray and gently smash each one with soonerfork or masher, keeping them in one piece for the best crispiness. Let them steam dry on the tray for another 5 minutes to enhance that golden finish.
3-Now, drizzle the melted butter and olive oil evenly over the smashed potatoes. Sprinkle on 3/4 teaspoon salt and 1/4 teaspoon black pepper for flavor. Bake them without flipping for 45 to 55 minutes until they’re deep golden and crispy. Finally, serve them hot, garnished with finely chopped parsley if you like.
