2 cups buttermilk

1 cup pumpkin puree

2 eggs

3 tablespoons unsalted butter, melted and slightly cooled

2 teaspoons pure vanilla extract

2 1/2 cups all-purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

2 teaspoons pumpkin pie spice

1/2 teaspoon fine-grain sea salt or table salt

Butter and maple syrup for serving

Instructions

1-Prepare buttermilk: by mixing vinegar or lemon juice with milk; let sit for 5-10 minutes to thicken.

2-In a large bowl, whisk together buttermilk, pumpkin puree, eggs, melted butter (or substitute), and vanilla.

3-In a separate bowl, whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice (or substitute spices), and salt.

4-Gradually pour the dry ingredients into the wet ingredients, stirring just until combined. Do not overmix.

5-Let the batter rest for about 5 minutes.

6-Heat a non-stick griddle or frying pan over medium heat (approximately 325ยฐF). Lightly grease if necessary.

7-Pour batter onto the hot griddle in 1/3 cup portions, spreading gently if desired.

8-Flip pancakes when bubbles form on the surface and edges appear slightly dry, after about 1-2 minutes.

9-Cook the second side until golden brown and cooked through, about 1-2 more minutes.

10-Serve warm with butter, maple syrup, toasted pecans, or other toppings.
