πŸ₯— This Easy Pasta Salad is a fresh and colorful dish packed with crisp vegetables and a zesty Italian dressing.
⏱️ Perfect for quick meals or make-ahead lunches, it’s flavorful, nutritious, and simple to prepare in under an hour.

  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

1 (12 oz) box tri-color rotini pasta

1 pint grape tomatoes, halved

1 1/2 cups diced English cucumber

1 1/2 cups tiny chopped broccoli florets

1 cup chopped yellow bell pepper

1 cup olives, sliced

3/4 cup thinly sliced baby carrots

1/3 cup red onion, thinly sliced

1/2 cup finely shredded Parmesan cheese

1 1/3 cups Italian salad dressing

Instructions

First Step: Cook the Pasta
Cook pasta according to package instructions to al dente without seasoning the water. This is essential to prevent the pasta from becoming too salty, as the dressing and Parmesan will add salt to the final dish. Drain and rinse under cold water to stop the cooking process and cool the pasta down completely.

Second Step: Prepare the Vegetables
While the pasta cooks, prepare all your vegetables. Halve the grape tomatoes, dice the English cucumber into bite-sized pieces, chop the broccoli into tiny florets, and dice the yellow bell pepper. Slice the olives, thinly slice the baby carrots, and slice the red onion as thinly as possible for the best texture.

Third Step: Combine Ingredients
In a large bowl, combine the cooled pasta, tomatoes, broccoli, bell pepper, olives, cucumber, carrots, red onion, and Parmesan. This is where you can see the beautiful colors coming together, making it visually appealing as well as delicious.

Fourth Step: Add Dressing
Pour the Italian salad dressing over the salad and toss gently but thoroughly to coat evenly. Be careful not to break up the pasta or bruise the vegetables while mixing.

Fifth Step: Chill and Meld Flavors
Cover and chill for at least 30 minutes or up to 1 day. This resting period allows the flavors to meld together and the vegetables to marinate in the dressing, enhancing the overall taste of the salad.

Final Step: Serve
Before serving, give the salad another gentle toss. Add more dressing if needed, as the pasta may have absorbed some of the liquid while chilling.
