Instructions

-Start by prepping all your ingredients, including peeling and cutting 1 kg of potatoes into large chunks. This step sets the stage for smooth cooking, as it allows you to focus on each part without rushing. Remember, the total preparation time is 30 minutes, and cooking takes 35 minutes, serving four people comfortably.

-For the Garlic and Herb Buttery Mash, boil the potatoes in cold water and simmer for 20-25 minutes until tender. Drain them, return to the pan, and shake to remove excess moisture for creamier results. Then, mash the potatoes and stir in three-quarters of the 100 g diced salted butter, gradually adding ½ cup warm cream until smooth, followed by 3 minced garlic cloves, ⅓ cup chopped parsley, and salt and pepper to taste.

-Moving to the Seared Salmon, pat the 4 salmon fillets dry and season with salt and pepper. Heat 2 tablespoons olive oil in a pan over medium-high heat, then cook the salmon skin side down for 3-4 minutes before flipping and cooking for another 2-3 minutes until done. Keep it warm while you prepare the sauce.

-For the Lemon Butter Sauce, melt 50 g of the 200 g chilled and diced salted butter over medium heat. Add ½ cup dry white wine and simmer until reduced by half, then stir in ¼ cup lemon juice and 2 teaspoons lemon zest. On low heat, whisk in the remaining butter cubes gradually until the sauce thickens, and add 1 tablespoon chopped chives and salt to taste.
