Ingredients
4 tablespoons extra-virgin olive oil
4 garlic cloves, minced or pressed
Β½ teaspoon dried oregano
Β½ teaspoon dried basil
Β½ teaspoon Kosher salt
ΒΌ teaspoon freshly ground black pepper
Zest of 1 lemon
2 pounds shrimp, peeled and deveined
Β½ cup grated Parmesan
2 tablespoons chopped flat Italian parsley for garnish
Instructions
1-In a large bowl, combine the 4 tablespoons extra-virgin olive oil, 4 minced garlic cloves, Β½ teaspoon dried oregano, Β½ teaspoon dried basil, Β½ teaspoon Kosher salt, ΒΌ teaspoon black pepper, and zest of 1 lemon.
2-Add the 2 pounds of peeled and deveined shrimp to the bowl and toss thoroughly to coat. Cover the bowl and let it marinate in the refrigerator for 1 to 3 hours.
3-Preheat the oven to 400 degrees Fahrenheit.
4-Remove the shrimp from the marinade and toss with Β½ cup grated Parmesan cheese in the bowl.
5-Spread the shrimp mixture evenly onto a 13Γ9 inch baking dish or large baking sheet.
6-Roast at 400 degrees Fahrenheit for approximately 8 minutes, or until the shrimp are pink, firm, and cooked through.
7-Garnish with a drizzle of olive oil and the 2 tablespoons chopped flat Italian parsley before serving.
