Ingredients

– 1 1/4 cups all-purpose flour (gluten-free flour can be substituted)

– 1/2 cup unsalted butter, cold and cubed

– 3 tablespoons cold water, divided

– 1 large egg

– 1 1/2 cups strawberries, trimmed and sliced

– 1 1/2 cups raspberries

– 1 cup blueberries

– 2 tablespoons cornstarch

– 1/4 cup sugar (superfine preferred, regular white sugar works)

– 1 tablespoon lemon juice

Instructions

1-Preheat oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper.

2-Combine the flour and cold butter until the mixture resembles coarse crumbs. Add 2 tablespoons of cold water and mix until dough forms into a disc. Wrap and chill in the fridge for at least 10 minutes.

3-Toss the berries with cornstarch, sugar, and lemon juice in a bowl.

4-Roll out the chilled dough into a 12-inch circle on the parchment-lined baking sheet. Place the berry mixture in the center, leaving about a 2-inch border around the edges. Fold the border over the fruit filling.

5-Whisk the egg with the remaining tablespoon of water, brush it over the dough edges, and sprinkle with sugar.

6-Bake for 30 to 35 minutes or until the crust is golden and flaky. Let cool for about 5 minutes before slicing.
