Ingredients

2 lb (1 kg) boneless, skinless chicken thigh fillets

3 large garlic cloves, minced (about 3 teaspoons)

1 tablespoon white wine vinegar (or red wine/apple cider vinegar)

3 tablespoons lemon juice

1 tablespoon extra virgin olive oil

3 tablespoons Greek yogurt (preferably full fat)

1 1/2 tablespoons dried oregano

1 teaspoon salt

Black pepper to taste

2 cucumbers (to yield about 1/2 to 3/4 cup grated cucumber after squeezing out liquid)

1 1/4 cups Greek yogurt (preferably full fat)

1 tablespoon lemon juice

1 tablespoon extra virgin olive oil (or more for richer flavor)

1 garlic clove, minced

1/4 teaspoon salt

Black pepper to taste

3 tomatoes, deseeded and diced

3 cucumbers, diced

1/2 red Spanish onion, finely chopped

1/4 cup fresh parsley leaves (optional)

Salt and pepper to taste

4 to 6 pita breads or flatbreads

Instructions

1-Mix marinade ingredients in a bag, add chicken, coat thoroughly, and marinate for at least 2 hours (preferably 3, up to 12 hours, no longer than 24).

2-Prepare tzatziki by halving cucumbers lengthwise, scraping out watery seeds, grating, and squeezing out excess liquid. Combine grated cucumber with remaining tzatziki ingredients and let sit at least 20 minutes.

3-Toss salad ingredients with salt and pepper.

4-Heat an outdoor grill to medium-high or heat 1 tablespoon olive oil in a frying pan over medium-high heat.

5-Remove chicken from marinade and cook 2-3 minutes per side until golden and cooked through. Rest covered for 5 minutes.

6-Cut chicken if large, warm pita or flatbreads, and assemble gyros by placing salad, chicken, and tzatziki on the bread, then rolling up.

7-Serve family-style to allow self-assembly.
