Ingredients

– 1 lb (approximately 450 g) ground turkey

– 2 medium sweet potatoes

– 2 small zucchinis

– 2/3 cup shredded parmesan cheese

– 1 1/2 teaspoons garlic powder

– 1 teaspoon rosemary

– 5 tablespoons olive oil

– Salt and pepper to taste

Instructions

1-First, preheat your oven to 375ยฐF (190ยฐC). Prepare the sweet potatoes and zucchinis by washing, peeling if desired, and cutting them into even cubes for uniform cooking.

2-In a large skillet, heat 5 tablespoons of olive oil over medium heat. Add the ground turkey, breaking it apart as it cooks, and season with 1 1/2 teaspoons of garlic powder, 1 teaspoon of rosemary, and salt and pepper to taste. Cook until browned, about 7-8 minutes.

3-Stir in the cubed sweet potatoes and zucchinis to the skillet. Mix well to combine all ingredients, allowing the flavors to blend for a couple of minutes.

4-Transfer the mixture to a large baking dish. Sprinkle 2/3 cup of shredded parmesan cheese evenly over the top.

5-Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is golden and the vegetables are tender.

6-Let it rest for 5 minutes before serving. This helps the flavors settle and makes it easier to portion out.
