2-Add the oil and warm water to the dry ingredients, then stir until a shaggy dough forms. You can use a mixer with a dough hook on medium speed until the dough forms a ball, or mix by hand with a spoon.
3-Knead the dough on a lightly floured surface for 1-2 minutes until it becomes smooth. If using a mixer, continue kneading for an additional minute on low speed.
4-Divide the dough into 16 equal portions, lightly coat each with flour, form them into balls, and flatten them slightly.
5-Cover the dough balls and let them rest for at least 15 minutes to relax the gluten.
6-Roll each ball into a 6-7 inch circle on a lightly floured surface, and separate the tortillas with parchment paper to prevent sticking.
7-Heat a dry skillet over medium-high heat and cook each tortilla for 30-60 seconds per side, until bubbles form and golden spots appear.
8-Stack the cooked tortillas in a covered container, zip-top bag, or under a damp towel to keep them soft.
9-Serve them warm, or store in an airtight container; refrigerate for up to 1 week, or freeze with parchment paper between layers for longer storage.
