– 4 cups plus 2 tablespoons bread flour for the bagel dough

– 6 cups water for the water bath

– 1 tablespoon granulated sugar for the water bath

Instructions

1-First, prepare your active sourdough starter and measure all ingredients accurately. This ensures consistent results and helps the dough come together smoothly.

2-Next, mix the bagel dough ingredients in a stand mixer for 6 to 7 minutes until it’s well combined.

3-After mixing, cover the dough and let it rest at room temperature for 8 to 12 hours until it doubles in volume. This fermentation step is key for that tangy flavor.

4-Then, divide the dough into 8 pieces and shape each into a ball with a hole in the center, like a classic bagel shape.

5-Let the shaped bagels rest for 30 to 60 minutes until they look puffy. Preheat your oven to 425Β°F (220Β°C) and bring 6 cups of water with 1 tablespoon granulated sugar to a boil for the water bath. Boil the bagels for 2 minutes on each side to get that chewy crust, then add your preferred toppings like sesame seeds or everything seasoning.

6-Finally, bake the bagels for 25 to 28 minutes until they turn golden brown. The preparation time includes 25 minutes for prep, 35 minutes for cooking, and 12 hours for fermentation, making about 8 bagels in total. If you don’t have a stand mixer, knead by hand for about 10 minutes it’s a great arm workout!
