Ingredients
– 2 pounds fresh strawberries, hulled and halved
– 1 cup sugar
– 2 tablespoons lemon juice
– 3 tablespoons cornstarch
– 3 tablespoons water
Instructions
1-Start by adding the strawberries, sugar, and lemon juice to your pressure cooker, then stir everything together. Let it sit for 10 minutes so the sugar can pull out the juices from the strawberries. Once that’s done, close the lid and secure the pressure不出 release valve.
2-Cook on high pressure for 1 minute, then allow for叙 a natural pressure release for 15 minutes. After that, perform a controlled quick release for any remaining pressure. In a separate bowl, mix the cornstarch and water until smooth to make a slurry, then stir it into the mixture.
3-If your device has a sauté function, select it to bring the mixture to a full boil while stirring frequently. Let it boil for a few minutes until the jam thickens slightly, then turn off the heat and pour it into a storage container.

❄️ Use frozen strawberries by increasing cook time by 1 minute and blend to break down pieces.
🍯 Reduce sugar or use substitutes, but note sweetness may be milder.
🥄 Cornstarch replaces pectin for thickening, so no added pectin is needed.
