Ingredients
– 4 slices thick Italian bread
– 2 tablespoons pesto
– 1 cooked chicken breast, sliced lengthwise
– 2 tablespoons slivered red onion
– 1/4 cup thinly sliced roasted red peppers
– 4 ounces low moisture part skim mozzarella cheese, sliced or shredded
Instructions
1-Spread pesto evenly on two slices of bread.
2-Layer each pesto-covered slice with half of the chicken breast, slivered red onion, roasted red peppers, and mozzarella cheese.
3-Top each sandwich with one of the remaining bread slices.
4-Heat a panini press and coat lightly with cooking spray.
5-Place sandwiches in the press and grill for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
6-Remove sandwiches, cut each in half, and serve hot.
