Instructions
1-Place the 4 cups of chopped kale in a large bowl and sprinkle it with a pinch of sea salt.
2-Massage the kale leaves with your hands until they darken and become tender this step helps soften the greens and cut down on bitterness.
3-Add 1 cup of sliced strawberries, 1 chopped avocado, 1/3 cup of sliced almonds, and 1/4 cup of feta cheese to the bowl, then gently toss everything together.
4-In a small jar, combine 2 tablespoons of olive oil, 2 tablespoons of fresh lemon juice, 1 teaspoon of honey, 1/2 teaspoon of poppy seeds, 1/8 teaspoon of salt, and 1/8 teaspoon of freshly ground black pepper; shake well to mix.
5-Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
6-Serve right away for the best flavor, or let it chill for a bit if you prefer a cooler bite.
