Instructions

1-Preheat the oven to 325Β°F (163Β°C). Grease and flour two 9Γ—5-inch loaf pans to prevent sticking.

2-Mix dry ingredients: In one bowl, whisk together 3 cups all-purpose flour, 1 teaspoon salt, 1 teaspoon baking soda, and 1 teaspoon baking powder.

3-Prepare wet base: In a large bowl, combine 2 cups granulated sugar and zest of 2 large lemons. Rub them together with your fingers to release that amazing fragrance.

4-Add wet ingredients: Stir in 3 large eggs, 1 cup light olive oil, 1 tablespoon fresh lemon juice, and 1 1/2 teaspoons vanilla extract until smooth.
