πŸ§€ This versatile dish is perfect for brunch or dinner, delivering protein, fats, and carbs in a delicious, easy-to-make frittata.

  • Total Time: 30 minutes
  • Yield: 6 servings

Ingredients

– 4 tablespoons olive oil

– 4 small russet potatoes, washed and chopped

– 2 tablespoons green onions, chopped

– 1/4 cup green onions, chopped for mixing

– 8 large eggs

– 2 tablespoons milk

– 5 strips cooked bacon, chopped

– 1/8 teaspoon salt

– 1/8 teaspoon black pepper

– 1 cup cheese (cheddar recommended)

– Sour cream for serving

Instructions

1-Preheat your oven: Start by preheating your oven to 400 degrees Fahrenheit to get everything ready for that perfect bake.

2-Cook potatoes: Heat the olive oil in a large skillet and cook the potatoes until they’re tender, about 5 minutes. Then, add 2 tablespoons of chopped green onions and set the mixture aside to let the flavors build.

3-Whisk eggs and milk: In a separate bowl, whisk together the 8 large eggs and 2 tablespoons milk until well combined.

4-Stir in ingredients: Stir in the 1/4 cup chopped green onions, the chopped cooked bacon, the cooked potatoes, and half of the 1 cup cheese. Season this mixture with 1/8 teaspoon salt and 1/8 teaspoon black pepper for that ideal taste.

5-Cook mixture on stove: Pour everything into a greased 10-inch skillet and cook over medium heat until it’s half set, which takes a few minutes.

6-Bake in oven: Transfer the skillet to the oven and bake for 12 minutes, then top with the remaining cheese and bake for 2-3 more minutes until it melts perfectly.

7-Final step: Let it cool slightly before serving with sour cream.
