Ingredients

– 4 eggs (separated, at room temperature)

– 3/4 cup (150g) sugar

– 1 teaspoon vanilla extract

– 1 stick (4 oz / 125g / 1/2 cup) unsalted butter (melted)

– 3/4 cup (4 oz / 115g) plain all-purpose flour

– 2 cups (500 ml) lukewarm milk (full fat or low fat, but not zero fat)

Instructions

1-Preheat your oven to 325ยฐF (160ยฐC) and butter an 8″x8″ (20cm x 20cm) square cake pan to prevent sticking.

2-Separate the 4 eggs, then beat the egg whites until stiff peaks form and set them aside for later.

3-In another bowl, beat the egg yolks with 3/4 cup (150g) sugar until the mixture turns pale yellow, then add 1 teaspoon vanilla extract and 1 stick (4 oz / 125g / 1/2 cup) melted unsalted butter.

4-Fold in 3/4 cup (4 oz / 115g) plain all-purpose flour until just combined, then slowly add 2 cups (500 ml) lukewarm milk while mixing to create a thin batter.

5-Gently fold the beaten egg whites into the batter in thirds to keep it airy, aiming for a consistency like thick pouring cream, then pour it into the prepared pan.

6-Bake for 40 to 50 minutes until the top is golden brown and the cake does not jiggle when shaken; check at 30 minutes and cover with foil if needed to avoid overbrowning.

7-Once baked, cool the cake in the pan for 10 minutes before turning it out onto a cooling rack to cool completely for the best texture.
