Ingredients

– 1 tablespoon fresh basil leaves, chopped

Instructions

1-Season the 4 boneless, skinless chicken breasts with 1 teaspoon kosher salt and Β½ teaspoon ground black pepper.

2-Heat 1 tablespoon olive oil and 1 tablespoon unsalted butter in a skillet over medium heat, then sear the chicken for 2-3 minutes per side until golden. Transfer the chicken and skillet juices to a slow cooker.

3-In a bowl, whisk 1 cup chicken stock, 1 tablespoon cornstarch, 4 cloves minced garlic, ΒΎ teaspoon crushed red pepper (if using), Β½ teaspoon dried oregano, and ΒΌ teaspoon dried thyme. Pour this mixture over the chicken in the slow cooker.

4-Top the chicken with Β½ cup chopped sun-dried tomatoes packed in oil. Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, until the chicken reaches 165Β°F.

5-Remove the chicken and keep it warm. Stir in 1 cup warmed heavy cream and Β½ cup grated parmesan cheese into the slow cooker liquid until smooth.

6-Return the chicken to the sauce, spoon sauce over the top, and let it rest on warm for 5-10 minutes. Garnish with 1 tablespoon chopped fresh basil leaves before serving.
