– 4 skinless salmon filets (roughly the same size)
– 1 tablespoon olive oil
– 2 teaspoons dried Italian seasoning
– Β½ teaspoon kosher salt
– ΒΌ teaspoon cracked black pepper
– 3 tablespoons butter
– 2 teaspoons minced garlic (fresh preferred, garlic powder optional)
– 3 tablespoons flour
– 1 Β½ cups chicken broth (mushroom or vegetable broth can be substituted for a flavor change)
– ΒΎ cup heavy cream (half and half can be used for a lighter version)
– Β½ cup grated Parmesan cheese
– Β½ cup drained sun-dried tomatoes
– 1 teaspoon dried Italian seasoning
– 1 teaspoon lemon zest
– Fresh basil leaves for garnish (optional)
Instructions
1-Season Salmon: Brush salmon filets with olive oil, then season with Italian seasoning, salt, and pepper.
2-Sear Salmon: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook salmon for about 3 minutes per side until golden and crispy, then reduce heat to cook through. Remove salmon and set aside.
3-Make Sauce: In the same skillet, melt butter over medium-high heat. SautΓ© garlic for 30 seconds. Stir in flour to form a paste. Whisk in chicken broth, heavy cream, and Parmesan cheese until smooth.
4-Finish Sauce: Add sun-dried tomatoes, Italian seasoning, and lemon zest. Season with salt and pepper to taste. Simmer until sauce thickens.
5-Combine & Simmer: Return salmon to the skillet, placing it on top of the sauce. Simmer on medium-low heat for 10 minutes.
6-Garnish & Serve: Garnish with fresh basil leaves and extra lemon zest if desired. Serve warm, ideally over pasta or rice.
