Ingredients
– 1 whole cauliflower
– 2 tablespoons extra virgin olive oil, plus extra for drizzling
– 1 tablespoon mild smoked paprika
– 1 teaspoon garlic powder
– 1 teaspoon cumin
– 1/4 teaspoon salt, plus about 1 tablespoon salt for boiling water
– Juice of half a lemon
– 1/3 cup crumbled feta cheese
– 1 tablespoon fresh chopped parsley
Instructions
1-First, preheat your oven to 400 degrees Fahrenheit.
2-Next, trim the leaves from the bottom of the cauliflower.
3-Place the cauliflower in a pot of salted water (or stock) to season the inside. Bring the pot to a boil and cook the cauliflower for about 10 minutes.
4-Carefully remove the cauliflower and place it in a cast iron or heavy oven-safe skillet.
5-Drizzle olive oil over the entire cauliflower.
6-In a small bowl, mix the smoked paprika, garlic powder, cumin, and 1/4 teaspoon of salt. Then sprinkle this spice mixture evenly over the cauliflower.
7-Place the skillet in the oven and roast for approximately 15 minutes.
8-Remove from the oven and garnish with the crumbled feta cheese, chopped parsley, lemon juice, and additional olive oil.
9-Serve with extra feta cheese and lemon wedges on the side if desired.
