Instructions

1-First, heat a cast iron skillet on high heat and add the corn. Cook for 8-10 minutes, stirring occasionally, until it gets a nice char. Once done, remove from heat and add butter and salt, stirring until everything mixes well.

2-Next, place the corn in a bowl and stir in mayonnaise and lime juice. Add 1 teaspoon of chili powder and mix thoroughly to coat the kernels. Finally, sprinkle with cotija cheese, the remaining 1 teaspoon of chili powder, and chopped cilantro before serving immediately for the best taste.
