Instructions
1-Gather and prepare all ingredients, including chopping cashews and measuring flours. Preheat oven to 410 degrees.
2-In a large bowl, cream the cold butter, brown sugar, and sugar for about 4 minutes until light and creamy.
3-Add the eggs and vanilla extract, then mix for 1 more minute.
4-Fold in the unsweetened cocoa powder, cake flour, all-purpose flour, cornstarch, baking soda, and salt.
5-Next, add the semi-sweet chocolate chips, mini marshmallows, and cashews.
6-Roll the dough into large balls, each weighing 5 to 6 ounces, and place them on a parchment-lined baking sheet. For a better appearance, add a few extra semi-sweet chocolate chips and mini marshmallows on top, pressing them lightly.
7-Bake for 9 to 11 minutes. After removing from the oven, gently press the melted marshmallows at the edges toward the center with a small spatula to shape the cookies. Let the cookies rest on the baking sheet for 15 minutes before transferring them.
