Instructions

1-First Step: Cut an 8 by 8 inch square of parchment paper and place it in the bottom of an 8 by 8 inch baking pan to make removal easy later.

2-Second Step: In a large saucepan, combine the 1/4 cup unsalted butter, 1/4 cup brown sugar, 1/4 cup honey, and 1/4 cup cookie butter spread. Heat over medium-low, stirring occasionally until the mixture bubbles, then cook for 2 more minutes while stirring. Remove from heat and stir in the 1 teaspoon vanilla extract.

3-Third Step: Add the 2 cups oats, 1 cup crispy rice cereal, and 1/3 cup chopped cookies to the saucepan. Stir until everything is well coated with the mixture.

4-Fourth Step: Pour the mixture into the prepared pan and press it evenly with a spatula. Sprinkle the 1/4 cup mini chocolate chips on top and gently press them in for a finishing touch.

5-Fifth Step: Refrigerate for at least 30 minutes before cutting into bars. This chilling time helps them set firm and easy to handle.
