– 1 tablespoon orange zest

– 1 teaspoon pure vanilla extract

– Β½ teaspoon orange extract (optional)

– 2 cups + 2 tablespoons (270 g) all-purpose flour

– Β½ cup (100 g) granulated sugar (adjustable to taste)

– 2 teaspoons baking powder

– Β½ teaspoon salt

– 1 cup (120 ml) powdered sugar

– 1 tablespoon (15 ml) orange juice

Instructions

1-Preheat oven to 350Β°F (180Β°C). Line a muffin pan with liners or spray with cooking spray to avoid any sticking.

2-In a large bowl, whisk 2 large eggs. Add Β½ cup (120 ml) vegetable oil, Β½ cup (125 g) plain yogurt, ΒΌ cup (60 ml) orange juice, 1 tablespoon orange zest, 1 teaspoon pure vanilla extract, and Β½ teaspoon orange extract if using. Mix until everything blends smoothly.

3-Add 2 cups + 2 tablespoons (270 g) all-purpose flour, Β½ cup (100 g) granulated sugar, 2 teaspoons baking powder, and Β½ teaspoon salt. Whisk gently until just combined, taking care not to overmix for fluffy results.

4-Divide the batter evenly among 12 muffin cups, filling them about two-thirds full to allow for rising.

5-Bake for 20 minutes, or until a toothpick inserted in the center comes out clean. Let the muffins cool completely on a rack before adding the glaze.

6-For the glaze, mix 1 cup (120 ml) powdered sugar with 1 tablespoon (15 ml) orange juice, adjusting as needed for the right consistency. Drizzle over cooled muffins and garnish with extra orange zest if you like.
