Instructions

1-To prepare, begin by beating the 1 cup unsalted butter with 1/2 cup packed light or dark brown sugar and 1/4 cup granulated sugar until creamy.

2-Then, add 1 and 1/2 teaspoons pure vanilla extract and mix well.

3-Next, incorporate 2 and 1/4 cups all-purpose flour, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon salt, beating on low until just combined.

4-Stir in 3/4 cup finely chopped pecans to evenly distribute the crunch.

5-Divide the dough into two halves and shape each into an 8-inch log about 2.5 inches in diameter, then wrap tightly in plastic wrap.

6-Chill the logs in the refrigerator for at least 3 to 4 hours or overnight.

7-Before baking, mix 1/4 cup coarse sugar and 1/4 cup finely chopped pecans on a plate and roll the chilled logs in this mixture to coat all sides.

8-Slice each log into approximately 12 cookies and place them on baking sheets spaced apart.

9-Bake at 350ยฐF (175ยฐC) for 12 to 14 minutes, until the edges brown, then allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
