Instructions

1-Start by preparing the homemade persimmon syrup, which is the heart of this cocktail. You’ll simmer the ingredients for about 20 minutes, then puree and chill it, and finally shake it up with vodka and lemon juice for a refreshing finish.

2-First, gather all your ingredients. Next, in a saucepan, combine the persimmons, sugar, water, lemon zest, lemon juice, and star anise. Bring to a simmer and cook for 20 minutes. Then, remove the zest and star anise, puree the mixture, and chill it to yield about 1 1/2 cups of syrup.

3-To assemble the drink, add 3 ounces vodka, 3 ounces of the chilled persimmon syrup, and 1 ounce lemon juice to a shaker with ice. Shake for 30 seconds, then strain into glasses filled with ice and top with seltzer water. Finally, garnish with persimmon slices, lemon slices, and star anise pods.
