Ingredients

– 2 Β½ cups (325g) all-purpose flour, spooned and leveled

– 1/2 teaspoon fine sea salt or 1 teaspoon kosher salt

– 1 tablespoon sugar, optional

– 1 cup (230g) very cold unsalted butter, cut into 1/2-inch cubes

– 6 to 8 tablespoons ice water, or more as needed

Instructions

1-Mix 1 Β½ cups flour, salt, and sugar in a bowl or food processor.

2-Add butter and blend until it forms coarse crumbs or a paste.

3-Incorporate the remaining flour and mix briefly.

4-Sprinkle in ice water gradually until the dough holds together.

5-Shape into disks, wrap, and chill for at least 1 hour.

Once chilled, roll out the dough on a lightly floured surface to your desired thickness, then fit it into the pie dish and trim any excess.

If your recipe calls for pre-baking, prick the crust with a fork and bake at 375Β°F (190Β°C) for about 15 minutes.

This method works for both single and double crust pies, and it’s a great way to try out simple baking techniques for scones too.
