Ingredients

– 1 cup (130g) salted or unsalted pistachios

– 1 cup (16 Tbsp; 226g) unsalted butter

– 3/4 cup (90g) confectioners’ sugar

– 1 teaspoon pure vanilla extract

– 1 teaspoon almond extract

– 2 and 1/4 cups (281g) all-purpose flour

– 1-2 drops green food coloring

– 1/4 cup (4 Tbsp; 56g) unsalted butter

– 1 cup (120g) confectioners’ sugar

– 2 tablespoons (30ml) milk or heavy cream

– 1/4 teaspoon pure vanilla extract

– 1 cup (130g) pistachios provides crunch and nutty flavor

– 1 cup (226g) unsalted butter adds moisture and richness

– 3/4 cup (90g) confectioners’ sugar sweetens and creates smooth texture

Instructions

1-Pulse the pistachios into very fine crumbs using a food processor or chop finely to yield 3/4 cup of crumbs.

2-Beat the butter until creamy and smooth.

3-Add the confectioners’ sugar, vanilla extract, and almond extract; mix until combined.

4-Incorporate the flour, pistachio crumbs, and green food coloring if used; continue mixing until dough forms. It may be thick and crumbly at first.

5-Cover and chill the dough in the refrigerator for 30 minutes to up to 3 days. If chilled more than 2 hours, let the dough sit at room temperature for 30 minutes before shaping.

6-Preheat the oven to 350°F (177°C) and line baking sheets.

7-Roll the dough into 1 tablespoon-sized balls and place them 2 inches apart on the baking sheets.

8-Bake for 14 to 15 minutes until lightly browned on the edges and just browned on top.

9-Cool cookies on the sheet for 5 minutes, then transfer to a rack to cool fully.
