– 1 1/2 cups plain/all-purpose flour for the breading

– 1/2 cup cornflour/cornstarch for the breading

– 1 tsp cooking salt for the seasoning blend

– 1/2 tsp celery salt for the seasoning blend, or substitute with 1/4 tsp extra cooking salt

– 1 tsp black pepper for the seasoning blend

– 1 tsp regular (sweet) paprika for the seasoning blend

– 1 tsp dried thyme (crushed finer) for the seasoning blend

– 1 tsp dried oregano (crushed finer) for the seasoning blend

– 3/4 tsp onion powder for the seasoning blend

– 2 tsp garlic powder for the seasoning blend

– 1/2 tsp mustard powder for the seasoning blend

– 1/2 tsp ginger powder for the seasoning blend

– 1/4 tsp cayenne pepper (optional) for the seasoning blend

– 2 1/2 to 3 1/2 cups canola, vegetable, or peanut oil for frying, to reach a depth of 2.5 cm / 1 inch

– honey mustard sauce for dipping

Instructions

1-Prepare the chicken: cutting it into small, uniform pieces; this helps them cook evenly and get that ideal crunch.

2-Make the marinade: Mix your buttermilk, egg, and salt in a bowl for the marinade, then let the chicken soak in it for at least 30 minutes to tenderize.

3-Create the breading: combine the flour, cornstarch, and all those spices in another bowl to create your breading mix.

4-Coat the chicken: take each piece of chicken from the marinade and coat it thoroughly in the breading, pressing gently to make sure it sticks well.
