– 3/4 tsp onion powder for the seasoning blend
– 2 tsp garlic powder for the seasoning blend
– 1/2 tsp mustard powder for the seasoning blend
– 1/2 tsp ginger powder for the seasoning blend
– 1/4 tsp cayenne pepper (optional) for the seasoning blend
– 2 1/2 to 3 1/2 cups canola, vegetable, or peanut oil for frying, to reach a depth of 2.5 cm / 1 inch

Instructions
1-Prepare the chicken: cutting it into small, uniform pieces; this helps them cook evenly and get that ideal crunch.
2-Make the marinade: Mix your buttermilk, egg, and salt in a bowl for the marinade, then let the chicken soak in it for at least 30 minutes to tenderize.
3-Create the breading: combine the flour, cornstarch, and all those spices in another bowl to create your breading mix.
4-Coat the chicken: take each piece of chicken from the marinade and coat it thoroughly in the breading, pressing gently to make sure it sticks well.
5-Fry the chicken: Heat your oil in a deep pan to about 175Β°C (350Β°F), and fry the pieces in batches to avoid crowding the pan this keeps them crispy.
6-Drain the chicken: After frying for 4-5 minutes until golden, drain them on a wire rack.
7-Baking adaptation: if youβre baking, preheat your oven to 200Β°C (400Β°F) and bake for 15-20 minutes, flipping halfway. This method is great for lighter meals and still delivers tasty results.
8-Use a thermometer: Remember, the key is in the details, like using a thermometer for oil temperature, which ensures every batch comes out just right.
