1 frozen pie crust or half a recipe for a double pie crust

1/2 pound (about 227 grams) thin strips of bacon chopped into 1/2-inch pieces

1/2 cup (about 80 grams) diced onion

1 cup (about 100 grams) shredded cheese (sharp white cheddar or Gruyere)

1 3/4 cups (about 414 ml) half and half (or equal parts whole milk and heavy cream)

4 large eggs

1/2 teaspoon kosher salt

1/4 teaspoon finely ground black pepper

1/4 teaspoon smoked paprika

1/8 teaspoon ground nutmeg

1 tablespoon chopped parsley or chives (optional garnish)

1 egg white for brushing the tart interior

Instructions

1-Preheat your oven to 375ยฐF (190ยฐC) and prepare the crust by placing it in a 9-inch tart pan; prick the base with a fork.

2-Blind bake the crust for 10 minutes with weights to hold its shape.

3-Cook the chopped bacon in a skillet until crisp, then caramelize the diced onion in the same pan.

4-In a bowl, whisk eggs, half and half, salt, pepper, smoked paprika, and nutmeg until smooth.

5-Sprinkle the bacon, onion, and shredded cheese evenly in the crust.

6-Pour the custard mixture over the fillings and bake at 350ยฐF for 35-40 minutes until set.

7-Let cool for 10 minutes, then slice and garnish with herbs if desired.
